In elementary school, a woman from the Nk’Mip band taught our class to make bannock over a fire. She gave us the recipe. It worked every time, but I lost it.
This year at Camp Napopo I tried this Bannock recipe. I ended added a lot more Bisquick than the recipe called for and though it tasted ok. It just wasn’t the recipe I was hoping it would be.
I found another recipe in an old book when I got back. I’m going to try it next time.
Bannock
Ingredients
- 2 cups homemade biscuit mix (see below)
- 1/2 cup water
Directions
- Add water to 2 cups of the homemade biscuit mix.
- Need dough. If too sticky add a bit more mix.
- Snake dough around the end of your roasting stick.
- When the embers glow, put the handle end of the stick into the ground angled over the fire. Turn the stick gradually until it is evenly browned.
Homemade Biscuit Mix
- 8 cups flour
- 1/4 cup baking powder
- 1 TBSP salt
- 1 cup shortening
- water
- 1 cup Bisquick buttermilk baking mix
- 3 Tablespoons oil or margarine
Directions
- Beat shortening in gradually at low speed, until the dough has a coarse bread crumb appearance.
- Store in a 3 quart container . It will stay fresh for many weeks in a cupboard or 4-6 weeks in a refrigerator.
- Preheat over to 450 degrees.
- Add 2/3 cup milk to mix and stir.
- Knead until smooth.
- Spoon onto greased cookie sheet.
- Bake for 10 minutes.
